  • Choose Fuyu persimmons that are firm. They should not yield to pressure.
  • Pick Fuyu persimmons that are dark orange in color. The darker they are, the riper and sweeter they are.
  • Select Fuyu persimmons that are heavy for their size.
  • Search for a Fuyu persimmon with a calyx (stem) that is as green as possible. An older persimmon will have a dry, brownish colored calyx.
