Tip #36:  Healthy Chip Recipe + Strawberry Hummus

Our long-awaited sunshine-filled days have arrived, and so has a delicious new hummus I had the pleasure of dipping into this last holiday weekend. It’s made with white beans instead of garbanzos which gives it a surprisingly smooth and still rustic texture.

I was asked by my good friends at Sigona’s if I had a chip that I thought was healthy to accompany it. And of course, I said yes! To clarify, I view chips as a means to an end. They are purely a substrate or carrier to anything delicious; just like the French fry is to the catsup, the chip is to the hummus.

The hummus is the star and holds most of the flavor, and because it is smooth, and this flavor slightly sweet, the chip needs to be a little salty and savory, and most definitely crunchy. My chip recipe is so easy and will take only a few minutes to make.

And for future, keep in mind the strawberry hummus is sweet. It could also be a much healthier alternative to dessert, if you used it inside a crepe and add fresh strawberries.

Toni’s Healthy Chip Recipe

What to buy:

  • La Tortilla Factory organic sprouted wheat tortillas or Whole Wheat Pita, available at Sigona’s!
  • Lantana Strawberry Hummus
  • Fresh Strawberries

What to do:

Using kitchen scissors, cut tortilla or pita in half, then half again (like you are slicing a pie). until you have eight triangular shaped chips. Do not separate the layers of the pita.

Spray lightly with olive oil which helps the salt to stick. I use my Misto olive oil pump which is one of my favorite kitchen tools. Sprinkle lightly with salt.

Place in toaster oven directly on wire rack using small tongs. Toast for about five minutes, until light brown. Your toaster oven temp will vary so keep an eye on them, so they don’t overcook! Once they cool they will get crunchy.

Top each chip with a small dollop of hummus. Garnish with a strawberry slice.
