Prepping ingredients ahead of time makes for healthy & easy and go-to meals.
Eating well most days requires planning and preparation. To minimize the amount of work required, try to make any food-prep time serve for at least two meals. For example, in the evenings prepare larger meals so you have leftovers for lunches the next day.
Delicious, healthy whole grains (farro, brown rice, quinoa) can be prepared in large batches and keep for 4-5 days. Measured out in portions, these can be incorporated to make delicious veggie dishes in minutes.
Boneless, skinless chicken breasts are another easy go-to. If you roast a batches of chicken breasts, they’ll stay good for 4-5 days also. They’re easy to slice and throw on a green salad or to reheat and serve for an entrée.
When chopping vegetables for a salad or stir-fry, chop extras and toss them into Tupperware for a ready-to-grab salad. Keep a tub of hummus or salsa in your office fridge, and a good supply of hand-to-mouth fruit on your desk, and afternoon healthful snacking is set!
Also, this is the best time of year for two low glycemic fruits: berries and melons. They’re a great snack with paired with Fage Greek yogurt.
