Heirloom Blenheim Apricot Energy Bites with Cashews and Chia Seeds

Dried fruits & nuts are a fantastic snack to have around when the kids are hungry, when you’re headed out for a hike, to the beach or even for a day of shopping. They pack a lot of nutrients, protein, fiber, flavor and more. 

One of our favorites is, of course, the heirloom Blenheim apricots. The Blenheims are incredibly flavorful and are one of our best-sellers! 

All of our heirloom Blenheim dried apricots are from Hollister, where the weather and soil conditions are excellent for growing the delicate variety. Though it thrives in this area, the Blenheim has become scarce as farmland is replaced by businesses and housing. It’s also such a delicate variety (it bruises easily), most farmers do not bother with it. The solution: drying!

We’ve worked with the same farmer for over 45 years to provide these locally grown treats. Mark Gibson grows and processes the apricots with meticulous care. He picks at the peak of ripeness, hand cuts the fruit in half and dries them in the sun, a process which helps retain the natural, bright orange color, vitamins and minerals.

Blenheims are great for snacking, but we like to incorporate them into different dishes, too, such as Heirloom Blenheim Dried Apricot Energy Bites with Cashews and Chia Seeds (recipe below). We hope you find your favorite on this list, and maybe even something new to try.

Heirloom Blenheim Dried Apricot & Medjool Date Energy Bites with Cashews and Chia Seeds

(Vegan || Gluten-Free || Paleo) The heirloom Blenheims and dates are naturally sweet enough that no added sugar is needed to give these a sweet, yet pleasantly tart, taste. They’re also gluten-free, vegan and paleo-friendly! They’re great to keep in the fridge to pop into a lunch box or for a quick pick-me-up. Makes about 2 dozen bites.

Ingredients
  

Ingredients:

  • 1 cup local dried heirloom Blenheim apricots see note
  • 1 cup raw cashews see note
  • 1/2 cup pitted medjool dates (5 to 6 dates) see note
  • 1/2 cup shredded coconut unsweetened
  • 1 Tbsp chia seeds
  • 1/2 tsp vanilla extract

Instructions
 

  • Place all ingredients in the bowl of a food processor. Pulses then process until the ingredients are all about the same size, like a course crumb. You may need to stop and use a spoon to rearrange some of the mixture from time to time.
  • Portion out tablespoon-sized scoops and roll into balls. Place the bites on a baking sheet as you work to roll all the mixture.
  • Store in an air-tight container in the fridge for up to 1 week.
