In the Kitchen with Sigona’s featuring Citrus
Warm Spinach Orange Salad
Compliments of Johnston Farms
Ingredients:
- 1/2 (10 oz.) package fresh spinach, stems removed
- 1 Satsuma mandarin orange, peeled and sectioned
- 1/4 cup sliced almonds
- 2 tablespoons cider vinegar
- 1-1/2 tablespoons orange juice
- 1-1/2 tablespoons olive oil
- 1-1/2 tablespoons honey
Preparation:
- Combine spinach, orange sections and almonds in a large serving bowl.
- Bring vinegar and remaining ingredients to a boil in a small saucepan over medium heat.
- Pour over spinach mixture and toss. Serve immediately.
Makes 2 servings.
Satsuma Fudge Sauce
Compliments of Johnston Farms
Ingredients:
- 1 package (6 ounces) semi-sweet chocolate pieces
- 1 tablespoon butter
- 1/2 cup marshmallow cream
- 2 teaspoons fresh grated Satsuma peel.
- 2 tablespoons fresh squeezed Satsuma juice
Preparation:
- In a small saucepan, melt chocolate and butter over low heat.
- Add remaining ingredients, stirring until smooth.
Serving ideas:
- Pour over Marianne’s Vanilla Ice Cream.
- Drizzle over sliced angel food cake and add more Satsuma sections, raspberries, or cut-up fruit of your choice.
Makes about 3/4 cup sauce.
