Air Fryer Eggplant Fries Served with Sigona’s Old World Marinara
Whether your air fryer is part of your countertop now or if it’s buried in the cupboard, it’s time to get it preheated!
Eggplant is one of those veggies that can be used as the star of a dish, such as eggplant parmesan, or roasted, mashed and mixed into a dip like baba ganoush! We love this dish for its simplicity. Plus, the fries seem as if they’re fried with oil, but these are oil free. Plus, they’re vegan and vegetarian friendly, and can also be made with gluten-free breadcrumbs.

Air Fryer Eggplant Fries Served with Sigona’s Old World Marinara

Ingredients
Ingredients:
- 1 small eggplant such as a Chinese or Italian
- 1 egg
- 1 Tbsp water
- 3/4 cup Italian-seasoned breadcrumbs
- 1 cup Sigona’s Old World marinara for dipping
Instructions
- Slice ends off the eggplant then cut in half across the middle. Slice sticks about 3” long and 1/2” wide.
- Beat the egg in a small bowl with the water. Transfer to a shallow dish. Spread out the breadcrumbs on a second plate. Coat the eggplant slices in egg then roll in the breadcrumbs. Repeat until all eggplant is coated.
- Preheat the air fryer to 370°F. Line the inside of an air fryer basket with foil.
- Working in batches if necessary, add the eggplant slices to the air fryer in a single layer. Cook for 1- to 12 minutes, shaking occasionally, or until the outsides are crispy and golden brown.
- Meanwhile warm the marinara.
- Transfer the eggplant fries from the air fryer to a serving dish. Provide the warmed marinara for dipping.
