Robbie’s Thyme Roasted Lamb Chops

Ingredients
  

Ingredients:

  • 4 to 6 thick lamb loin chops
  • 2 tsp coarse kosher salt
  • 1 to 2 tsp freshly cracked black pepper
  • 2 to 4 garlic cloves chopped
  • 2 to 4 sprigs fresh thyme
  • 2 sprigs fresh rosemary chopped
  • 6 Tbsp Sigona’s Greek thyme olive oil divided (This is a fused oil, learn more by clicking the link!)

Instructions
 

  • Rub the lamb with salt and pepper. Allow to sit at room temperature for at least 30 minutes.
  • Preheat oven to 400°F. Add 2 tablespoons of the olive oil to a large, oven-safe skillet. Heat over medium-high heat. When hot, add the lamb to the skillet in a single layer. Cook for 3 minutes a side, flipping once, then remove from heat. Sprinkle the lamb with the fresh herbs and garlic, and drizzle with remaining olive oil.
  • Transfer skillet to oven and roast lamb chops to desired doneness, about 10 minutes for medium-rare or cooked until 135°F (see note). Use caution removing the hot skillet from the oven. Transfer lamb to platter, cover, and let rest for 5 to 10 minutes before serving and slicing.
