The “Ultimate Ratio” for a simple balsamic dressing
Our specialty foods & cheese curator, John Nava, put together this simple, yet delicious, use for Kaimana lychee white balsamic and our Suyo cucumber white balsamic.
Nava likes to use this to dress little bites, served on a toothpick or small fork, as an appetizer, using one of these two combinations detailed below:
- Slice of cucumber + leaf of basil + ball of watermelon
- Small ball or slice of fresh mozzarella + leaf of basil + half of one Cabernet cherry tomatoes

The “Ultimate Ratio” for a simple balsamic dressing
Ingredients
For the dressing:
- 3 parts Sigona's Fresh Press extra virgin olive oil such as Portuguese Cobrançosa
- 2 parts Sigona's Kaimana lychee white balsamic
- 1 part Sigona's Suyo cucumber white balsamic
For the cucumber & watermelon small bites:
- Slices of cucumber
- Fresh basil leaves
- Balls or cubes of watermelon
For the tomato & mozzarella small bites
- Small balls or slices of fresh mozzarella
- Fresh basil leaves
- Cabernet cherry tomatoes, halved
Instructions
- Measure out the ingredients using the ratio listed above (for example, 1 tablespoon Suyo cucumber white balsamic, 2 tablespoons Kaimana lychee white balsamic and 3 tablespoons Sigona's Fresh Press extra virgin olive oil.
- Use toothpicks or small forks to create small stacked bites of the ingredients of choice. Arrange them on a serving tray and either drizzle the bites with the dressing or pour the dressing into a bowl and allow guests to dip their bite in the mixture before eating.
