Cabbage, Sweet Pepper and Mandarin Slaw with a Lemongrass-Mint & Persian Lime Dressing
This lightly dressed, simple slaw is lovely served with fish or other white proteins. The combination of our lemongrass-mint white balsamic and our Persian lime olive oil adds a savory yet refreshing layer of flavor you’ll love.
Cashews add a nice texture as well as some protein and healthy fats.

Cabbage, Sweet Pepper and Mandarin Slaw with a Lemongrass-Mint & Persian Lime Dressing
Ingredients
For the salad:
- 2 cups thinly sliced green cabbage
- 2 cups thinly sliced red cabbage
- 4 yellow sweet mini peppers or 1 yellow bell pepper sliced into matchsticks
- Half of one large carrot cut into 3” pieces and sliced into matchsticks
- 2 mini or 1 Persian cucumber sliced on a bias into discs (if the Persian cucumber is thick, slice it in half lengthwise before slicing into half moons)
- 2 mandarins peeled, sliced horizontally across the middle and broken into segments
- 1/4 cup chopped spring onion greens when in season or green onions
For the dressing:
- 1 Tbsp fresh lime juice
- 1 Tbsp honey
- 2 Tbsp Sigona’s Persian lime olive oil
- 2 Tbsp Sigona's roasted sesame oil
- 4 Tbsp Sigona’s lemongrass-mint white balsamic
- A pinch of salt and pepper
Garnishes:
- Cashews look for Sigona’s raw or roasted-salted cashews
- Sesame seeds
Instructions
- In a large bowl, gently toss together the cabbages, peppers, carrots, cucumbers, mandarins and spring onion or green onion.
- In a small bowl, whisk together the lime juice, honey, oils, balsamic, salt and pepper.
- Drizzle the dressing over the slaw and toss, toss, toss until well coated. Allow to sit for at least 20 minutes, toss again, top with garnishes and serve.
