- Choose rhubarb that is crimson red in color without too much green on it.
- Make sure it’s firm. Older rhubarb tends to be rubbery.
- Store in the refrigerator to maintain its freshness.
- Buy field-grown rhubarb–it’s more flavorful and it’s more nutritious!
