Rob Sigona’s Produce Tips: Lobster Mushrooms

Selection

Rob Sigona with fresh, wild lobster mushrooms, jet-fresh from Oregon. 2021.
  • As with any wild mushroom, fresher is better
  • Look for lobster mushrooms that have a bright, red-orange color
  • Check for mushrooms that are free of cracks (critters may get in there)

Storing & Prepping

  • Place them in a paper bag and store the closed bag in the refrigerator until ready to use
  • When preparing, clean off as mush dirt as possible with a dry brush; do not use water until you are ready to cook them
  • You may need to trim away areas that have trapped a lot of dirt
  • Unlike some other mushrooms, lobsters do ok when briefly exposed to water; you can give them a quick rinse in cold water and then pat them dry before slicing.
