Loaded Hummus with a Suyo Cucumber White Balsamic Marinated Tomato Salad
This is an excellent way to spruce up your favorite hummus! The Suyo cucumber white balsamic is light yet zippy with a definitive note of cucumber. Serve the loaded hummus with toasted pita, extra veggies, crackers or crostini.
This white balsamic is crisp with a zip to it! It is fantastic in vinaigrettes, marinades, shrubs, agua frescas and more. Use it to add some zing to caprese salad or shrimp cocktail.

Loaded Hummus with a Suyo Cucumber White Balsamic Marinated Tomato Salad

- 1/2 cup chopped seeded cucumber
- 1/2 cup halved cherry tomatoes
- 2 Tbsp chopped red onion
- 2 Tbsp Sigona's Suyo cucumber white balsamic
- 1 Tbsp chopped fresh parsley
- 1/8 tsp each Kosher salt and freshly ground black pepper
- Sigona's Fresh Press extra virgin olive oil
- 8 oz hummus such as Sinbad
- Crumbled feta optional
Instructions
- Together in a medium bowl, add the cucumbers, tomatoes, red onion and parsley. Season with salt and pepper, stir together and then add the balsamic. Allow the mixture to marinate at room temperature for at least 20 minutes, stirring occasionally.
- When ready to serve, gently spread out the hummus on a serving tray or wide, shallow bowl so hummus is about 1/2 to 1 inch thick. Drizzle with a little olive oil, then spoon on the tomato salad, including any remaining juices.
