Robbie Sigona’s Sautéed Ground Lamb with Gai Lan

This simple, easy-to-make dish is healthy, flavorful and satisfying! You can eat it just like this, if you’re looking for a low-to-no carb dish, but it’s also fantastic with rice, pasta or another grain for a more substantial meal.

You can add some poached or fried eggs on top as well, for more protein and flavor! As for the gai lan (aka Chinese broccoli), you could par boil it before adding to the meat, but gai lan is tender enough that it cooks well using this preparation too.

Ingredients
  

Ingredients:

  • 3/4 to 1 bunch of gai lan ends trimmed by about 1/4 inch
  • 1 Tbsp Sigona’s Fresh Press extra virgin olive oil
  • Half a yellow onion diced
  • Salt & pepper to taste
  • 6 oz ground lamb ground bison or beef works as well
  • A pinch or two dried oregano
  • A pinch or two dried thyme
  • A pinch of red pepper flakes optional, if you’d like a little heat
  • Freshly grated Parmigiano Reggiano as desired

Instructions
 

  • Chop the gai lan stems and leaves into 1- to 2-inch pieces. Set aside.
  • Heat olive oil a large skillet over medium to medium-high heat. Add the onion, season with salt and pepper. Sauté, stirring frequently, for about 5 minutes or until the onion has begun to soften.
  • Add the ground meat cook, stirring to break up the pieces, for about 5 to 7 minutes. When just about cooked through, add the prepared gai lan. Season with salt, pepper, oregano, thyme and red pepper flakes, if using.
  • When the meat is cooked through and the veggies are still crisp-tender, remove from the skillet to a serving dish. Top with grated cheese and serve.
