Totally satisfying and nutrient rich, and you get an extra boost of protein from the egg and hempseeds. Season or sweeten the tahini dressing as you like, and add in some extra grilled veggies as your heart desires. Serves 1.
Roasted Shrimp and Avocado Spring Rolls with Quinoa and Fresh Veggies
Filled with avocado, quinoa and shrimp, these protein-packed rolls are healthy and filling. Don’t be intimidated by rice paper if you haven’t tried it before. You might need to practice with a few sheets before you get into a good groove with the rolls. If you prefer, add in or substitute any of the veggies with julienned bell pepper. Big Grain Bowls with Spiraled Sweet Potatoes and a Tahini Dressing
Time to clean out the fridge? Try a big grain bowl! Sometimes called hippie bowls, macro bowls, they're often called Buddha bowls because the approach is about a balance to what you eat, that and the ingredients are generally served in a deep-rimmed dish that’s rounded at the top by overflowing, vibrant food. There are no strict guidelines to assembly; add in or remove any ingredients you like best. Buddha bowls are excellent vegan or plant-based options, but you can add a fried or soft-boiled egg, or even shredded chicken for added protein. Layering in fermented food, such as sauerkraut or pickled beetroot, is a great way to add in more nutrients and health benefits. Choose all raw ingredients or add more flavor by roasting some veggies.
Grapefruit and Avocado Salad with a Meyer Lemon Vinaigrette
Simple, healthy and delicious! This is lovely as a side to white meats or as a brunch feature. A great way to start the New Year! If you get any foodie magazines or spend any time on Pinterest, it’s likely you’ve recently seen many an egg baked in an avocado. Well, we decided to take a crack at it (pun intended) ourselves, and added a quick salsa for a fresh factor. You’ll love this easy, hearty egg dish; it’s perfect for breakfast or brunch. If you don’t care for the salsa, simply top the baked eggs with chopped chives. Serves 2 to 4.

Mahi Mahi is a tropical, meaty, delicate fish that firms up and turns white when cooked. It cooks quickly and is often used for dishes such as this. The slaw in this recipe provides a nice, fresh crunch and fantastic flavor, and the crema adds a nice creamy lime factor which brings the dish all together. Serves 2 to 4.
