Mixed Greens, Radicchio, Pecorino and Heirloom Moyer Prunes with a Lemony Vinaigrette
This fresh, colorful, pleasantly pungent and bitter salad is filled with our sweet heirloom Moyer prunes and salty Pecorino cheese, tossed with a bright Meyer lemon vinaigrette.
Mixed Greens, Radicchio, Pecorino and Heirloom Moyer Prunes with a Lemony Vinaigrette
Ingredients
Ingredients:
- 1 clove garlic minced
- 1 lemon quartered
- 3 Tbsp Sigona’s Meyer lemon olive oil
- 2 tsp Dijon mustard
- 2 tsp honey
- Kosher salt and black pepper to taste (about ¼ to ½ tsp each)
- 1/2 medium head radicchio cored and sliced into thin ribbons
- 1 Belgian endive cored, halved lengthwise and sliced into thin ribbons
- 4 oz. heirloom Moyer prunes pitted and halved
- 1 1/2 ounces shaved* Pecorino Romano cheese divided (*Use a small knife or vegetable peeler to shave very thin slices.)
- 3 packed cups baby arugula about 3 oz or mixed greens
- 1 lemon sliced in wedges, for serving
Instructions
- In a large bowl, whisk together the garlic, juice from 1 lemon wedge (about 2 tsp – 1 Tbsp), Sigona’s Meyer Lemon olive oil, Dijon, honey, salt and pepper.
- Add the radicchio, endive, prunes, half of the cheese and all of the arugula. Toss, toss, toss until all is combined and evenly dressed.
- Serve topped with remaining shaved cheese and garnished with lemon wedges.
