Meyer Lemon Grilled Calamari

Meyer Lemon Grilled Calamari

Simple and delicious, this flavorful calamari dish will serve as a lovely appetizer. Serves 4.

Ingredients
  

Ingredients:

  • 2 lbs fresh cleaned squid tubes and pieces
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1/4 tsp dried oregano
  • 1/4 cup Sigona’s Meyer lemon fused olive oil plus more for drizzling (Mix it up! Use Sigona’s garlic oil for drizzling.)
  • Lemon wedges for serving
  • Fresh parsley minced, for serving

Instructions
 

  • In a wide-bottomed bowl or baking dish, whisk together the marinade ingredients. Add the squid and toss to coat well. Cover and allow to marinate for at least 30 minutes or refrigerate and marinate overnight.
  • Before cooking, allow the mixture to sit out at room temperature for at least 30 minutes.
  • Preheat an outdoor grill or indoor grill pan over high heat. When grill or pan is hot, shake off excess marinade from the squid and place on the grill. Cook until opaque and showing grill marks, just about 2 to 4 minutes a side, depending on thickness, being careful not to overcook.
  • Remove cooked squid from the pan and slice the tubes into ½” wide rings. Arrange on a serving platter, drizzle with a little extra olive oil and sprinkle with fresh parsley. Serve with lemon wedges.
