Classic Plum Torte
This recipe is cited at so many places, we can’t find its original source. Truly a tasty classic!
¾ cup plus 2 tablespoons sugar
8 tablespoons butter (1 stick), softened
1 cup flour
1 teaspoon baking powder
2 eggs
Pinch of salt
3-4 plums, halved
1 teaspoon cinnamon
Preheat oven to 350 degrees.
Cream the ¾ cup sugar and butter together with an electric mixer until fluffy. Add the flour, baking powder, eggs and salt and mix well. Pour into a 9 or 10 inch ungreased springform pan. Cover the top with the halved plums, skin side down. Mix the remaining 2 tablespoons sugar with the cinnamon and sprinkle over the top.
Bake at 350 degrees for 40 to 45 minutes, until a toothpick comes out clean when tested. Remove and cool to room temperature. (It’s also great warm or cold.) Enjoy!
Cut pie into wedges and enjoy.
