In the kitchen with Sigona’s: Guac-plus!
This comes from our friend Michelle, a pediatric physical therapist who specializes in working with infants and toddlers. She’s in amazing shape, already well on her way to reaching her goal of climbing all of the nation’s 14,000-foot mountains. After a full day of patients and a workout with her trainer, Jake, she’ll fix this for herself while she gathers the ingredients for supper with her husband and two teen boys.
Ingredients for one serving:
- ¼ – ½ Hass avocado (depending on size and how much you love avocados)
- ½ cup cottage cheese
- ¼ cup salsa
Mash the avocado in a bowl. Add the cottage cheese and stir until well-mixed. Top with a layer of salsa.
Serve with chips, toasted pita bread, or vegetables. This gives you a minimum of 15 grams of protein plus calcium and good fat – the flavor is incredible – and it will keep you going till supper!

For your Superbowl party, just multiply your ingredients (assume 1/2 serving per person, because you’ll likely have lots of other goodies on the table).
