Organic Roasted Fingerling Potatoes Seasoned with Rosemary
Simple, healthy, delicious. It doesn’t get much easier or comforting than roasted potatoes, and fingerlings are the best: rich and creamy. Serves about 6.
- 2 lbs. organic fingerling potatoes
- 1 TBL chopped fresh rosemary
- 1 1/2 TBL Sigona’s Fresh Press extra virgin olive oil
- Salt & pepper, to taste
Directions: Preheat oven to 400°. In a large bowl, toss the potatoes with the rosemary and olive oil. Season well with salt and pepper then spread potatoes out in a single layer on a foil-lined baking sheet.
Roast at 400˚for 25-30 mins, flipping once half way through. Potatoes will be tender throughout, with golden, crispy skin when done.
