Rob Sigona’s Produce Tips: Lobster Mushrooms
Selection
- As with any wild mushroom, fresher is better
- Look for lobster mushrooms that have a bright, red-orange color
- Check for mushrooms that are free of cracks (critters may get in there)
Storing & Prepping
- Place them in a paper bag and store the closed bag in the refrigerator until ready to use
- When preparing, clean off as mush dirt as possible with a dry brush; do not use water until you are ready to cook them
- You may need to trim away areas that have trapped a lot of dirt
- Unlike some other mushrooms, lobsters do ok when briefly exposed to water; you can give them a quick rinse in cold water and then pat them dry before slicing.
