Mahi Mahi Lettuce-Cup Tacos with Slaw and Avocado-Lime Crema
We’re hitting almost all the dietary excitement in one fell swoop! Not only is this gluten-free, you can easily make this Keto- AND Paleo-friendly if you wish. Mahi Mahi is a tropical, meaty, delicate fish that firms up and turns white when cooked. It cooks quickly and is often used for dishes such as this. The slaw in this recipe provides a nice, fresh crunch and fantastic flavor, and the crema adds a nice creamy lime factor which brings the dish all together. Serves 2 to 4.
Grilled Pineapple Salsa || with Mahi Mahi Lettuce Wraps
Baklouti oil perfectly potent, in terms of spiciness, so just a 1/2 tablespoon will add the right amount of heat and flavor to this salsa. The coconut balsamic balances it all out, adding a little zip to each bite. Makes about 4 to 5 cups.**This is perfect to spoon over mahi mahi fish tacos. Season and cook the fish as you would in the recipe linked below!

Since 1984 Ron has grown some of the best heirloom navel oranges in the state, if not the world: the heirloom Washington Navel.
"I have yet to taste an orange that is better than ours,” says Matik. “Maybe some with the same sweetness, but never better.”
