Neapolitan Herb Chopped Veggie Salad

If you’re a fan of bold flavors and are looking for a way to get more veggies in to your day, this salad is for you.

Our Neapolitan herb balsamic and Meyer lemon fusion olive oil combine to bring the ingredients together and add a lot of fantastic flavor. This will keep up to 4 days in the fridge, making it a nice choice to pack up with a protein for your lunches for the week.

Neapolitan Herb Chopped Veggie Salad

Ingredients
  

Ingredients:

  • 9 mini sweet peppers of varying color seeds removed and diced
  • 4 Persian cucumbers diced
  • 1 large avocado diced (look for an avocado that is ripe yet on the firm side)
  • 1 can chickpeas drained and rinsed
  • 1/2 cup chopped fresh parsley
  • 1/4 to 1/2 a red onion diced (more or less to taste)
  • 2 Tbsp fresh lemon juice
  • 2 tsp salt
  • 2 Tbsp Sigona’s Neapolitan herb olive oil check out our other infused balsamics too!
  • 2 Tbsp Sigona’s Meyer lemon fusion olive oil

Instructions
 

  • To a large bowl, add the prepared peppers, cucumbers, avocado, chickpeas parsley, onion and lemon juice. Season with salt then drizzle on the balsamic and olive oil.
  • Gently fold the ingredients together until well coated. Serve or store for up to 4 days in the refrigerator.
