Golden Pineapple & Persian Lime Marinated Shrimp Skewers
This is a quick, tropical marinade mix that adds a lot of flavor to shrimp. Add other veggies or fruit to the skewers, or simply select shrimp as the sole skew-ee.

Golden Pineapple & Persian Lime Marinated Shrimp Skewers
Ingredients
Ingredients:
- 1/2 cup Sigona’s golden pineapple white balsamic
- 1/2 cup Sigona’s Persian lime olive oil
- 1 tsp. Dijon mustard
- A pinch of salt
- About 20 Patagonian Red Shrimp deveined, tail-on or off
- 1 bell pepper cut into 1-inch pieces
- 1/2 a red onion cut into 1-inch pieces
- 1 cup cubed fresh pineapple
- 6 to 8 wooden skewers
Instructions
- In a medium bowl, whisk the balsamic, oil, Dijon and salt. Add shrimp and marinate, chilled, for 30 to 60 minutes.
- Meanwhile, soak the wooden skewers in water for at least 30 minutes (to prevent burning).
- Remove shrimp from marinade; discard marinade. Skewer ingredients onto sticks: shrimp, pep-per, onion, pineapple. Fit as much as allowed without overcrowding.
- Preheat grill to medium-high (about 400°F). Grill with lid closed for about 2 minutes per side, flip-ping once. Shrimp are cooked when no longer transparent.
