  • bright and green and not too rusty with brown or mottled spots.
  • mature, full or plump and velvety to the touch as opposed to over mature pods that are flat and hard.
  • cooked as soon as possible. They loose their sweetness and become more startchy with every day that passes after picking.
  • refrigerated for a day or two only in a loosely sealed plastic bag.
