‘Tis the Season for Hatch Chiles
‘Tis the season! Hatch chile season, that is! Hatch chiles have an almost cult-like following – they’re one of those IYKYK items that people, especially those in the Southwestern states, love with a passion.
Hatch chiles are usually harvested and roasted in the fall so, as we said, ‘tis the season! To celebrate, we’re giving away a wedge of Hatch Chile Cheddar, made in Paso Robles by our friend and award-winning cheesemaker Reggie Jones of Central Coast Creamery.

This outstanding cheese is made using Central Coast Creamery’s mild white cheddar and the perfect amount of fire-roasted Hatch Chiles, which give the cheese a smoky flavor and a not-so-spicy chile kick. The chiles are certified Hatch chilies from the Hatch Valley in New Mexico, where they are fire roasted, hand peeled and chopped before they’re sent directly to the Creamery in Paso Robles.
Hatch chiles are a culinary treasure, held in high regard for their bold, earthy flavor that is enhanced when roasted. Roasting true Hatch chilies brings out their smoky flavor and a buttery richness – and that is what makes them a big deal.
The chiles allowed to have the honor of being called Hatch chiles are grown exclusively in New Mexico’s Hatch Valley. The Hatch Valley lies in what was once part of the Rio Grande River floodplain where the fertile, volcanic soil in the area, the topography and the climate influence the chile’s unique and distinctive flavor, known as terroir.
If you attended a recent Sampling Saturday at Sigona’s at our Palo Alto location, you may have already sampled this cheese, either via toothpick or as a mini slider made with a slice of baguette, a slice of melty Hatch Chile Cheddar, a dollop of our apricot jam and topped with Arugula. *Chef’s kiss!* This cheese is also excellent for quesadillas, chile rellenos, on top of enchiladas, in a grilled cheese or added to your next round of sourdough.
