Asparagus Mimosa
This delicious, French-inspired asparagus recipe is a fantastic side dish to serve for brunch or a dinner, especially in the spring, when local asparagus is in full swing. We added some bacon to add a little more flavor, but it’s just as good without the bacon. Inspired by Olive & Mango. Serves 4.
Parmesan & Panko Roasted Asparagus Fries with Basil Aioli
Everyone! Get excited about local asparagus being in season! Our basil oil is a top seller, and pairs incredibly well with vegetables, both fresh or roasted. You’ll absolutely love this aioli, and you can use what’s left over as a sandwich or burger spread, or use it on seafood, such as salmon or shrimp. The asparagus can easily be made gluten-free by carefully selecting your panko. Makes about 2/3 cup aioli.
Spring Risotto with Asparagus, Carrots, Peas, Leeks and Chives
Risotto is a dish that lends itself nicely to any season. Whether loaded with fresh green vegetables in the spring or festive orange butternut squash in the fall, it’s always a comfort dish that’s worth the time and patience. Serves 4 to 6.
You can use any combination of vegetables in this medley; we’ve adapted this recipe from The Pioneer Woman where she includes eggplant and red onion. The Herbes de Provence Olive Oil infuses flavors of rosemary, thyme, marjoram, savory and oregano, which season the vegetables beautifully. Try another of Sigona’s infused oils to incorporate a different flavor, such as our Garlic Olive Oil, Smokey Chipotle Olive Oil or the Tuscan Herb Olive Oil. Serves 6 to 8.
